《吃土豆的人》，画中的形象都是基于对当地农民的面孔与双手的研究。给提奥的信中提及：“这些乡亲，他们在微弱的灯光下的吃着土豆，这些在盘中取食的双手正是在地里耕种的双手，画面想表达的就是体力劳动——他们用双手诚恳地获取了食物。”他告诉提奥，人的皮肤变成“类似未削皮的土豆的颜色”。
